Summer time is all about grilling and kebabs for me! Lately, that has been extremely hard with the torrential downfall of rain here in Texas. Some roads are flooded out completely causing even more traffic. That in which delays the husband from getting home for just a tad of time before the sun goes down. Although, that doesn’t mean you still can’t have those chipotle chicken, bacon, and blue kebabs indoors.
It’s still summer time after all! You have to have those fun summer time vibes flowing. Did I ever mention how I love spicy food? So I am going to fully admit how much I love spicy food. It’s this tad of cajun blood I have that I LOVE anything fiery hot. I am not so big on habanero but I do love burn butt off hot food! These are not that spicy on my scale of 1 to 10 they are at about a 3 or 5. I bake the chicken in El Yucateco Chipotle Hot Sauce. Turns out just the perfect heat to mesh with the bacon and carrots that are sauteed in the bacon grease. You also add pineapple for extra flavor!

- 2 boneless, skinless chicken thighs
- 2 tablespoons El Yucateco Chipotle Hot Sauce
- 2 carrots; sliced into rounds
- 3 strips of bacon
- 2 tablespoons blue cheese crumbles
- Metal kebab skewers or wood
- Preheat oven to 400 degrees F.
- Place chicken thighs into the dish and top with two tablespoons El Yucateco Chipotle Hot Sauce. Cover with foil and bake for one hour.
- While the chicken is baking, fry the bacon on low until done. Remove bacon and set aside.
- Place carrots into the skillet in the bacon grease and saute on low until slightly tender about 3 to 5 minutes. Remove from heat and set aside.
- Alternating with the chicken, carrots, and bacon thread the kebab skewer. Serve with blue cheese crumbles for extra bite.
